Preheat oven to 425ºF. On a large baking sheet, toss Brussels sprouts with oil and season with salt, pepper, and everything seasoning. Bake until crispy, about 25 minutes.
While the Brussels sprouts bake, stir together the honey, hot sauce, and paprika in a microwave-safe bowl. Microwave for 30 seconds, stir. Set aside.
Remove from the oven and immediately top with brie while the Brussels Sprouts are warm.
Reduce oven temperature to 350°. Scatter pecans on a large sheet pan and bake until they are toasted, 8 to 10 minutes. Season with salt.
Arrange the Brussels sprouts with brie on a serving platter. Top each pecan and a drizzle of hot honey.
