This easy Sausage Gravy Biscuit Bubble Up Casserole is loaded with delicious biscuits baked in a flavorful egg and sausage scramble and topped with gravy!
In a large skillet, brown the sausage. Remove the sausage leaving the grease in the pan. Add 2 tablespoons shortening to the pan.
Once the shortening is melted, whisk in the flour and cook for 2 minutes.
Whisk in the milk. Whisk until no lumps remain. Add salt and pepper. Simmer over low heat about 15 minutes or until thick. (About the thickness of pancake batter.)
Assemble the Casserole
Preheat oven to 350 degrees F. Spray a 9x13-inch baking pan with non-stick spray.
In a bowl, whisk together eggs and 2/3 cup milk. Add salt and pepper.
Cut biscuits into 3 or 4 pieces and add them to the baking pan in a single layer.
Evenly spread sausage and cheese over the biscuits.
Pour egg mixture over the biscuits.
Carefully pour 2 cups gravy over the eggs. Reserve remaining gravy to serve with the casserole.
Bake at 350 for 35 minutes or until brown on top and set in the center. Serve warm. Garnish with green onions if desired.
