Ingredients
2
pounds
ribeye
or chuck eye steak
salt and pepper to taste
2
Tablespoons
butter
or more
¼
cups
feta cheese
crumbled
Instructions
Trim meat and cut it into 1-inch cubes.
Sprinkle generously with salt and pepper. Toss to coat all the sides.
Heat skillet on medium high.
Add 2 T butter to the skillet. Allow butter to melt and brown slightly.
Place some of the meat in the hot pan in a single layer. Do not crowd pan.
Don't stir or disrupt the steak for 30 to 45 seconds. You want it to sear.
Flip meat and cook an additional 30 to 45 seconds.
You want to sear the outside but remain rare to medium rare on the inside.
Remove meat to a platter and cook another batch.
When all the meat is cooked pour the pan drippings over the meat.
Sprinkle meat with crumbled feta cheese. Serve immediately.
Notes
2 pounds of steak makes approximately 4 entree size servings. It will serve 8 to 10 people if you're serving it as an appetizer.
