Add the ground beef, vegetables, and Rotel to a 10-inch cast iron skillet over medium heat. Saute and cook until the beef is fully brown and the vegetable are tender. About 5-10 minutes.
1 pound ground beef, 1 small yellow onions, 1 small bell peppers, 10 ounces tomatoes and green chiles
Add the chopped Velveeta to the skillet and stir until fully melted and combined. About 5 minutes.
16 ounces Velveeta cheese
Top with sour cream or cilantro, and serve with chips.
