In a medium-sized bowl add the hamburger, bread crumbs, egg, salt, and pepper. Mix together until it is well combined and the egg is incorporated.
1 pound hamburger meat, ⅔ cup bread crumbs, 1 large egg, salt and pepper to taste
Preheat oven to 350 degrees.
Using a spring release scoop, scoop the mixture into balls.
Place the meatballs in a baking dish. Pour the soup over the meatballs and bake for 25 minutes at 350 degrees.
1 can french onion soup
While those bake, cook the onions. In a medium skillet, heat 2 tablespoons of oil. Add onion slices and cook over medium-low heat until onions caramelize, about 15 minutes. Stir frequently. Remove them from the skillet when caramelized.
2 medium yellow onions, 2 tablespoons oil
Slice rolls in half and spread the butter on each side of the rolls. Place butter side up on a cookie sheet.
Once meatballs are cooked, remove from oven and set aside. Turn oven to low broil and set the rolls in the oven for 3-5 minutes, until the butter melts and bread toasts.
Remove rolls from oven but leave the oven on low broil.
Place the meatballs on the bottom part of each roll, top with generously with onions, top with slices of cheese. Repeats with remaining meatballs, onions, bread and cheese. (How many meatballs goes on each roll depends on how large they are and how many you have.)
18 slices Swiss cheese
Place the rolls with the meatballs on them back in the oven on low broil. Broil until the cheese melts and is golden and bubbly.
Remove from oven, top with other half of bread and press down gently. Serve.
