Preheat oven to 375 degrees. Place parchment paper or foil on a cookie sheet. Spray with non-stick spray.
Dice apples and place them in a bowl. Squeeze lemon juice over apples. Add brown sugar and cinnamon to apples and stir.
Roll crust on to 1/8 inch thick. Cut into 4-inch rounds or squares. On one half of the round, add 2 T apple mixture and one slice cheese if desired. Fold over and crimp with a fork to seal.
Place on a cookie sheet and bake 20 to 25 minutes or until golden brown.
Remove from oven and allow to cool before adding the glaze.
Whisk sugar and apple juice/cider until smooth, drizzle over warm pies.
