Heat 2 tablespoons of oil in a skillet over medium heat. Sear the shrimp for 3-4 minutes, or until they are fully cooked through and opaque. Once cooked, switch off the heat.

In a bowl, combine chopped cilantro, olive oil, garlic, shallot, and lime juice. Adjust the seasoning with salt and pepper to taste. Mix well.

In a bowl, add 2 cups of cooked rice as the base. Top with diced tomato, sliced avocado, and the cooked shrimp. Drizzle the chimichurri sauce over the shrimp and rice.
