Each ingredient makes these sausage sliders special and add to the overall exquisite flavor. They're spicy, but not hot and slightly sweet from the caramelized onions and rolls. The flavor is just on point and hard to beat!
Slice the rolls horizontally if they aren't already. Place them on a ½ sheet pan. Spread a thin layer of cheese, about ½ cup, on the bottom rolls and heat in the oven until the cheese is melted. Remove and set aside.
Heat a skillet to medium-low and add the oil and onions to the skillet. Cook low and slow about 10 to 12 minutes until the onions are soft and brown. Remove the onions from the skillet.
2 to 3 tablespoons olive oil, 2 cups Vidalia onion
Slice 3/4 of the way through the sausage and 'butterfly' them. Place in the skillet and cook on medium until the sausages are browned. Flip over and brown the other side. Cut the sausage so that they match the size of your slider buns.
2 - 3-count packs Smoked sausage
Place the sausage over the cheese in your buns. Top with caramelized onions. Add about 1 tablespoon of BBQ sauce over the onions. top that with remaining cheese and a sprinkle of sliced green onions. Place the top buns on the sandwiches.
⅓ to ½ cup BBQ sauce, 3 medium green onions
Melt 2 to 3 tablespoons of butter. Add the BBQ seasoning and stir. Brush mixture over the top of the rolls.
