Preheat oven to 350°F. Place cupcake liners in a muffin pan or spray with Wilton Cake Release.
In a large bowl, add cake ingredients and applesauce.
Stir with a whisk or spatula until the batter is smooth. It may look like there's not enough liquid to begin with, but keep gently stirring until it's all incorporated. Be sure to scrape the bottom of the bowl so there are no pockets of dry cake mix.
Pour cake batter into the prepared muffin pan. Bake for about 18 to 22 minutes* or until muffins are done.
Notes
The length of time to bake a cake depends on a lot of factors, including if your oven is calibrated and if your pan is light or dark. Keep a close eye the first time you bake a new recipe and make notes of how long it took and what, specifically, you used.
