Fresh Mozzarella Watermelon Salad is an easy salad and a great no-cook strategy for staying cool in the summer heat! It’s cool, delightful, and a creative way to serve watermelon!
WATERMELON SALAD
I kept hearing my Mom’s voice inside my head as Iย was concocting this salad, “Don’t just eat the heart of the watermelon!” Funny how childhood memories pop up at the weirdest times….
Well, I didn’t listen to her this time and made this wonderful, cool and refreshing salad with, gasp!ย just the center of the watermelon. I committed a Watermelon felony….hmmm, it was worth it!
You can’t get much better than a cool watermelon to beat the summer heat.
BEST SUMMER SALAD
This is such a light and tasty salad, an unexpected combo of flavors! The sweet and slightly crunchy watermelon paired with the creamy, fresh mozzarella is a winner. The two are seriously good without the mint and balsamic dressing. It’s simply over the top.
Serve this salad as a side to any main dish. It pairs beautifully with steak, fish, chicken, or pork dishes.
I also like that it’s super easy to put together, making it great for your average weeknight. It’s also beautiful and impressive and looks much more difficult than it actually is to through together, making it perfect for entertaining!
I serve it both with and without the layer of greens on the bottom. It’s great either way!
Layer slices of watermelon on a layer of spring lettuce blend or a simple lettuce leaf. Top watermelon with fresh mozzarella. Spread mint leaves over top. Drizzle with Balsamic Salad Dressing. It’s that simple. This salad is the epitome of refreshing!

Watermelon Salad
Ingredients
- 1 cup Spring salad mix or lettuce leaves, any kind
- 6 slices Watermelon mine are 4x4 squares
- 4 slices Fresh mozzarella 4x4 squares
- โ cup Balsamic Reduction or Date Syrup
- 4 to 6 medium Mint leaves
- 4 to 6 medium mandarin orange slices
- 1 pinch Everything Bagel Seasoning or salt
Instructions
- Layer the lettuce (or leaves), then watermelon slice then fresh mozzarella slice
- Repeat layers one more time and a final slice of watermelon. Top with orange and mint for garnish.
- Sprinkle with Everything Bagel Seasoning and drizzle on Balsamic Salad Dressing or Balsamic Reduction or Date Syrup over and serve.
