Watermelon Mojito

It’s slightly sweet, fruity, light and simply perfect for a hot summer day!
If you like a light tasting, refreshing cocktail this is the drink for you. If you like mojitos, this is the drink for you.
The cool taste of watermelon mixed with sweet rum, mint and a fizzy soda makes this an unforgetable cocktail. Mix this up for friends and you’ll be very popular. I should add a disclaimer: Plan to make more than you think you’ll need. You’ll need them.
I usually add sugar water to my mojitos. I’ve been trying to cut a few calories and a friend suggested this Fresca. (This is not a sponsored posts, by the way!) Fresca is much like tonic water or club soda. It has fizz, is neutral is flavor and zero calories. It’s perfect to top off the alcohol and muddled watermelon and mint.
The process I use for making this drink is simple. I muddle watermelon, mint, lime and ice in a shaker. If you’ll add the ice with the watermelon and mint, it helps to break the fruit down and release the flavors.
Next, pour in the rum and shake to combine.
In a glass that has been filled with ice, fill the glass half to 3/4 with the watermelon mixture and top it off with the Fresca. Stir gently to combine.
Two things to remember, Fresca is carbonated, you do not want to add it to the shaker and shake. Trust me. Remember that soda you dropped then opened?
You can substitute tonic water, club soda, Sprite, 7-up or any carbonated beverage that is neutral in flavor for the Fresca. It won’t be exactly the same, but will be close to my recipe. I do recommend Fresca if it’s available in your area.
For mocktail, simply leave out the rum. It’s a refreshing drink that doesn’t have to include alcohol!

Ingredients
1 Lime cut into wedges
12 Mint, leaves
2 to 3 cups Watermelon, cut into chunks
1 cup Ice
2 oz Rum
Fresca soda (can substitute tonic, club soda, Sprite, 7-up)
*garnish – watermelon, lime, mint for garnish
Instructions
- To a shaker add watermelon, mint, ice, and limes wedges and muddle crushing the ice and lime to release flavors.
- Add rum and shake.
- Fill glasses with ice and pour half full with watermelon mixture. Finish filling glass with Fresca and stir to combine.
- Garnish with watermelon wedge, mint stem and or lime wedge
