Two Pack Slow Cooker Roast is an easy weeknight dinner option. Full of flavor and totally hands-off cooking, this is my go-to weeknight dinner recipe.
This easy slow cooker beef recipe is so tender it falls apart and melts in your mouth! This roast creates a gravy while cooking. It’s good served over rice, mashed potatoes, or quinoa. Or, serve with Brown Sugar Cornbread and Unbundled Green Beans.

What is pot roast?
Pot roast is a big, tough beef cut that’s priced cheap. These tough cuts are perfect for slow cooking. You can sear, cover, and cook these cuts slowly in the oven or slow cooker with herbs and veggies until they are fall-apart tender.
What beef cuts do I use?
Tough cuts with lots of connective tissue, like chuck, brisket, and round, are the perfect cuts to use.
Chuck: Chuck roast, shoulder steak, boneless chuck roast, chuck shoulder pot roast, chuck seven-bone pot roast, or beef chuck arm. My first choice for pot roast. It has outstanding marbling, making the roast tender and juicy.
Brisket: Brisket comes from the cow’s well-exercised breast section, which means it has a lot of connective tissue. It’s most known for barbecue recipes and is typically cooked in a smoker. However, brisket makes a great pot roast.
Round: Rump roast or bottom round. It is leaner than the brisket or chuck, so you may need to add more fat to prevent your pot roast from drying out.
Slow cooking these cuts breaks the collagen down, tenderizing the meat. The beef releases its juices into the broth, giving your roast incredible flavor. Adding flour or cornstarch thickens the juices into gravy.

Ingredients:
- 2 pound chuck roast
- 1 pack meat loaf seasoning mix I used this brand. You can use any beef seasoning mix you like.
- 1 pack onion soup mix *I would not salt the roast as the onion soup mix has a lot of salt in it.
- 1/2 cup apple juice
- 1 tablespoon black pepper
Instructions
- Place the chuck roast in the bottom of a slow cooker. Turn cooker to low.
- Pour apple juice over the meat.
- Liberally pepper meat then top with both seasoning mixes. Cover and cook on low 4 to 5 hours.

Instead of using the apple juice….can beef broth be used instead?
I always add potatoes and carrots to my pot roasts in the crock pot. They take on the wonderful flavor and my whole meal is complete when it’s done.
Could you make this with a four pound roast? Would you have to double the spices and cooking time. I am not an experienced crock pot cooker, but would like to make this for Christmas dinner. Thank you.
Yes, you can use a four pound roast. Double your spices, but you won’t need to double the cooking time. The cook time should be about the same maybe 30 to 45 mintues longer. I would test it at the times given and let it go a little longer if necessary. let me know how it works, Nancy.
I usually brown meat before I put it In a slow cooker
I’ve done it both ways and couldn’t tell a difference in flavor, saves me time and clean-up to skip that step.
