- Romain lettuce, chopped. You may want to substitute a Spring salad mix.
- peaches, pitted and sliced. You can substitute nectarines.
- avocados, pitted and sliced
- blueberries
- red onion, sliced thinly
- blue cheese, crumbled, or substitute feta
- pecans salted and roasted
- lemon juice
- fresh mint leaves
- honey
- Dijon mustard

Of course, you can always substitute ingredients you don’t like. Try adding strawberries, corn, cilantro, cucumbers, radishes, or tomatoes.

Summer Peach Salad with Mint Salad Dressing
Ingredients
Peach Salad
- 5 cups Romain lettuce chopped
- 3 to 4 medium peaches pitted and sliced
- 2 medium avocados pitted and sliced
- 1 cup blueberries
- ½ cup red onion sliced thinly
- ½ cup gorgonzola cheese crumbled, or substitute feta
- 1 cup pecans salted and roasted
Mint Salad Dressing
- ½ cup freshly squeezed lemon juice
- ¼ cup fresh mint leaves
- 3 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic clove
- ½ cup olive oil
- salt and pepper to taste
Instructions
- Arrange the salad ingredients into individual bowls or in a large serving bowl.
- To prepare the dressing: Place the lemon juice, mint leaves, honey, mustard, and garlic into a food processor. Pulse until the ingredients are pureed. Add the olive oil and process until the dressing is well blended and the mint is fine. Adjust the taste with salt and black pepper. Process again to mix.
- Serve the salad with the dressing.
