Spinach Goat Cheese Strata
Ingredients
- 1 medium lemon zested
- 2 teaspoon Dijon mustard
- ยฝ teaspoon salt
- ยผ teaspoon black pepper
- 2 cups unsweetened unflavored almond milk plain unsweetened
- 6 large eggs
- 3 cups bread cut into 1-inch cubes
- 1 cup spinach
- ยฝ cup red onion thinly sliced
- ยฝ to ยพ cup goat cheese crumbled
Instructions
- If cooking immediately, preheat the oven to 400ยฐ F. If you're allowing the strata to sit for a while before baking, cover it and allow it to sit the strata on the counter for 30 minutes, then preheat the oven.
- Grease an 8 or 9-inch baking dish.
- In a medium bowl, whisk together the zest, mustard, salt, pepper, almond milk, and eggs.
