Spicy Chipotle Chili
Ingredients
- 2 pounds ground beef
- 1 medium green bell pepper
- 1 medium yellow onions
- ½ to 1 cup carrots peeled and grated
- 3 cloves garlic
- 14.5 ounce diced tomatoes with juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon ground cumin
- ½ teaspoon cayenne
- ½ teaspoon chipotle powder
- 1 teaspoon dried oregano
- 1 teaspoon molasses
- 1 teaspoon liquid smoke
- 2 teaspoons Worcestershire sauce
- 1/2 cup BBQ sauce
- 1 cup tomato sauce
Instructions
- Heat your dutch oven on the stovetop over medium heat. Add ground beef and spices. Brown almost all the way.
- Just before meat is thoroughly browned, add in the green peppers and cook for 5 minutes. Then add in onion. Give a good stir and allow to become tender.
- Add carrots and tomatoes. Give a quick stir. Pour in the BBQ sauce and pasta sauce. Cover and allow to simmer for at least 30 minutes, longer if possible. Serve with your favorite chili toppings.

I didn’t have chipotle seasoning but I had a can of chipotle peppers in adobo sauce and it was great! I think I used about a couple of Tablespoons of minced Chipotle peppers…. the smoky flavor is so good.
I liked how you used a 90/10 ground beef. I always thought getting the fattier meat and draining it would make it more flavorful but I like your point that your veggies can simmer in the meat longer and there is no messy draining to deal with. Very good!
