Skillet Potatoes and Our Favorite Foods -We did a little survey on a recent road trip of our favorite foods. I found it interesting. I certainly don’t like what the Jones boys like! Here are our top 10.
fat waffles with real maple syrup & real butter & hot (I usually don’t get it steaming hot because I’m making everybody’s and mine gets cold – that’s the drawback of being the cook)
skillet potatoes (my Granny’s skillet potatoes, who nobody can make as good as she did, recipe below)
McCarty Pottery chocolate cobbler (yes, I have tried and tried to duplicate without success!)
I can’t think of anything else that just makes me turn cartwheels.

I updated the picture on these potatoes in October 2013.

Wow, how my photography skills have improved!
In my mind, there are basic recipes that everyone needs to know how to make. A good potato recipe is one of them. I have several to choose from.
Wash and cube potatoes. Soak in water 30 minutes to an hour. Remove from water and drain potatoes well.
Add 1/4 cup oil to a cast-iron skillet and heat on medium to medium-low. Add just enough potatoes to make one layer in skillet liberally salt and pepper. (You will have to cook in batches or use two pans.) Cook on one side, undisturbed, until browned. This will take 12 to 15 minutes.
Turn with a spatula and cook until browned and cooked through. (Add more oil if necessary.) When potatoes are browned as much as you like, remove them from the pan and cook the second batch.
Serve warm.*You can use red potatoes, but I'd peel them if you do.
