Rotel Sausage Biscuit Bites
This is one of those recipes that require minimal effort with a great result. They are easy and quick to make. As well, they are perfectly portioned and ideal for a snack, appetizer, or party food!

- You can add shredded cheese to the top for more cheesiness!
- I used pork sausage. To save fat and calories, you can use chicken or turkey sausage.
- I use theย Rotel brand of Diced Tomatoes & Green Chilies. As well, I usually get theย Originalย flavor. They come in Hot, Mild, Fire Roasted, Lime & Cilantro. Three are probably more, but I use Original. Any flavor would probablyย be good.
- I recommend this Muffin Pan.

Rotel Sausage Biscuit Bites
Ingredients
- 1 pound sausage pork or turkey
- 8 ounces cream cheese cubed for easier melting
- 10 ounce tomatoes and green chiles
- 1 6-ounce can biscuits with layers 5-count package
Instructions
- This will make 15 appetizers if you separate each biscuit into 3 sections. So you'll need to use two 12-count muffin tins or cook three of them in 2 batches.
- Spray muffin tins with non-stick spray. Preheat oven to 350 degrees F.
- Separate biscuits into 3 thinner rounds. Don't cut them, you will pull them apart, this is why getting the biscuits with layers is important.
- Brown sausage and drain excess grease. Add diced tomatoes and cream cheese. Stir until heated through and cream cheese is melted. Allow to cool slightly
- Press one biscuit layer into pan forming cups.
- Fill each wonton cup with 1-2 tablespoons of the sausage mixture.
- Cook at 350 12 to 13 minutes or until hot and bubbly.
- Serve warm or at room temperature. Store in an airtight container in the refrigerator.

I make these every once in a while; just a bit different than your recipe but yet along the same line.
Theser are great when having over night guests.
When I use cans of Ro-Tel; be sure sure to drain ALL the liquid as much as possible or could end up with a soggy mess.

When I make these I usually triple the batch as they do freeze well.
