Traditional churros are fried dough rolled in cinnamon and sugar while still hot. They’re very similar to doughnuts in the US. Cinnamon and sugar speak the crowd-pleasing universal language. Using peanut butter sandwich crackers is a convenient base for coating in a buttery brown sugar sauce and topping with a sprinkle of cinnamon sugar. The result resembles a crunchy churro treat but with fewer steps and way more convenience!

These Ritz Churro Bites are bite-sized snacks that combine salty Ritz peanut butter cracker sandwiches with sweet cinnamon and sugar for a flavor explosion.

This easy recipe is great for a road trip, afternoon snack, game-watching, tailgating, and family movie or game night. Ok, they’re good anytime and all the time! 😉

These snack crackers also make a good gift if you need to bribe a gift for a neighbor, teacher, or friend.

Churros Ritz Bits Method

You’ll want to line a baking sheet with foil sprayed with non-stick spray or parchment paper.

Spread your crackers out in a single layer over the foil.

Cook the sauce. This is the only difficult step of the recipe. Have your ingredients measured and ready. As well, you want a timer ready to start. In a medium saucepan combine butter and brown sugar. Stirring constantly bring the mixture to a boil and boil for 1 minute. Remove the mixture from the heat and stir in 1 teaspoon of cinnamon and 1 teaspoon vanilla.

Pour this immediately on top of the crackers as evenly as you can. Spread and smooth the mixture over any crackers that didn’t get covered. You’ll need to work quickly, as the mixture will cool and harden quickly.

Next, bake the crackers for 10 minutes until the caramel sauce is bubbly.

While the crackers are cooking, combine the granulated sugar, cinnamon, and salt. When the crackers are ready, take the pan out of the oven. Now, immediately sprinkle with the cinnamon mixture, spreading it as evenly as possible.

Whew! The hard part is over!

After the crackers have cooled, break them into pieces. I like to serve them immediately. However, you can store your Ritz Bits Churros in an airtight container for up to a week.

  • Preheat the oven to 350°F/175°C.  Line a sheet pan with parchment paper or foil. Spread the crackers evenly on the baking sheet and set them aside.
  • In a medium saucepan combine butter and brown sugar. Stirring consistently bring the mixture to a boil and boil for 1 minute. Remove the mixture from the heat and stir in 1 teaspoon of cinnamon and 1 teaspoon vanilla. 
  • Pour this immediately on top of the crackers as evenly as you can.  Smooth out over any crackers that didn’t get covered, but you’ll need to be quick as the mixture will cool and harden fast.
  • Bake the crackers for 10 minutes until it’s bubbly all over.
  • While the crackers are cooking combine the granulated sugar, cinnamon, and salt. When the crackers are done remove the pan from the oven and immediately sprinkle with the cinnamon mixture. Sprinkle as evenly as you can.
  • Break into pieces after the crackers have cooled. Serve immediately. Crackers can be stored in an airtight for up to a week.

    Made a batch for office pot luck. So easy to make and the results were tasty! I used 2 boxes of ritz bits and 1.5 sticks of butter but otherwise followed the recipe as is. Everyone raved.
