This easy recipe is great for a road trip, afternoon snack, game-watching, tailgating, and family movie or game night. Ok, they’re good anytime and all the time! 😉

Ingredients

- 4 cups Ritz Bits peanut butter
- 1 cup butter
- 1 cup light brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
Churros Ritz Bits Method
You’ll want to line a baking sheet with foil sprayed with non-stick spray or parchment paper.
Spread your crackers out in a single layer over the foil.
Cook the sauce. This is the only difficult step of the recipe. Have your ingredients measured and ready. As well, you want a timer ready to start. In a medium saucepan combine
Pour this immediately on top of the crackers as evenly as you can. Spread and smooth the mixture over any crackers that didn’t get covered. You’ll need to work quickly, as the mixture will cool and harden quickly.
Next, bake the crackers for 10 minutes until the caramel sauce is bubbly.
While the crackers are cooking, combine the granulated sugar, cinnamon, and salt. When the crackers are ready, take the pan out of the oven. Now, immediately sprinkle with the cinnamon mixture, spreading it as evenly as possible.

Whew! The hard part is over!
After the crackers have cooled, break them into pieces. I like to serve them immediately. However, you can store your Ritz Bits Churros in an airtight container for up to a week.

Ingredients
- 4 cups Ritz Bits peanut butter
- 1 cup butter
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 2 tablespoons granulated sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
Instructions
- Preheat the oven to 350°F/175°C.  Line a sheet pan with parchment paper or foil. Spread the crackers evenly on the baking sheet and set them aside.
- In a medium saucepan combine butter and brown sugar. Stirring consistently bring the mixture to a boil and boil for 1 minute. Remove the mixture from the heat and stir in 1 teaspoon of cinnamon and 1 teaspoon vanilla.
- Pour this immediately on top of the crackers as evenly as you can. Smooth out over any crackers that didn’t get covered, but you’ll need to be quick as the mixture will cool and harden fast.
- Bake the crackers for 10 minutes until it’s bubbly all over.
- While the crackers are cooking combine the granulated sugar, cinnamon, and salt. When the crackers are done remove the pan from the oven and immediately sprinkle with the cinnamon mixture. Sprinkle as evenly as you can.
- Break into pieces after the crackers have cooled. Serve immediately. Crackers can be stored in an airtight for up to a week.

I want to make these but I don’t understand why the instructions say to break into pieces after the crackers have cooled. Also how does the hot mixture get to the bottom of the cracker?
It seeps under them. You can toss if you like, but my experience found that the caramel cools and hardens too quickly to stir them. If you’ve worked with caramel before you know how it spreads and hardens as it cools… some of the crackers will stick together.

Hi! I just made these for the first time, and they are still really soft and gooey. Does it take awhile for them to harden to be broken up? The taste is good, just very spread out and lots of extra of the toffee stuff. I thought 2 sticks of butter was too much but if nobody else has had trouble with it maybe it’s me?! I boiled for 1 minute, and baked for 10.
Sometimes when your cooking caramel or fudge, if the humidity is high it will not set up as well.
Good Morning, I am so excited to try these, but i do have one question. When you take them out of oven and sprinkle with cinnamon and sugar do you flip them as well and do the bottoms?

I found that the cinnamon sugar mixture oozes under the crackers as you’re smoothing them out. The first time I made them I tried to flip and stir and the caramel mixture cooled and began to harden too quickly to toss them.
Silly question but does anyhow know if these age/travel well? I’m hoping to make them and ship to a deployed soldier but I’m worried they’ll not last the journey.
I’m not sure about shipping but another reader made either this recipe or this one (https://www.callmepmc.com/baked-seasoned-ritz-bits/) for a road trip last year and was happy with how they ‘aged’. Her comments are on one of these two posts.
Ok, I didn’t read the recipe all the way through before starting. SO EVERYONE READ THE RECIPE ALL THE WAY THROUGH!!! I also forgot the vanilla even though it was sitting on the stove ready to pour. They are baking right now and I can’t wait for them to be done. I tasted the sugar/butter after I poured over the crackers and it was wonderful. Now, just waiting, waiting, waiting. You have so got to try these!!!

Plan to make these for a Valentine’s party. Should I spray the foil lined pan before I spread out the crackers so they don’t stick?
Yes non-stick spray or butter and they still want to stick so work quickly.
Will one box work or do I need two?
This recipe is written for 1 box, but I never make it now without doubling the recipe. My family loves it.
I made according to directions. I found 1 box wasn’t enough. They tasted great although next time I would invest in a box of regular ritz and break them up after. The peanut butter ritz did not make any difference and was costly after I doubled the batch.
Your recipe looks DELICIOUS; however, I have a question before making these. Your instructions say to spread in a single layer but the picture shows these stacked in a triple layer. I’m a bit confused. Thanks!
They’re already cooked, cooled, and in a bowl in the photos. The process goes too fast for me to take pictures during cooking them. They’ll stick together if they’re not in a single layer when you pour the caramel on them. Believe me, I made a mess of the first batch I made. The caramel cools and gets stiff too quickly to break them apart if they’re stacked.
I can’t find peanut butter ritz crackers anywhere. So… I improvised! I used rice Chex and corn Chex mixed together. I covered two cookie sheets with both mixed cereals and followed your directions to the T! Delicious!
Saw this in the Weekend Potluck. Tried ’em. Should’ve quadrupled the recipe. My husband is going insane. He tried one as a “snack” since he’s abstaining from desserts during Lent and how he’s getting itchy for Easter so I can make him a special batch. The kids have started a mutiny to get to them before I can. I even reduced the sugar by 1/4 cup and they are still just that good. Thank you for sharing!
