Cotija Chipotle Chicken Sliders
Ingredients
- 3 tablespoons Mexican seasoning divided
- 5 tablespoons butter melted
- 12 medium Hawaiian sweet rolls
- 1 cup Monterey Jack cheese shredded
- ยฝ medium Rotisserie chicken or 2 large breasts cooked and chopped
- 4 to 6 ounces queso fresco crumbled, or Cotija
Chipotle Mayonnaise
- ยฝ cup mayonnaise
- ยผ cup sour cream
- 2 medium chipotle peppers in adobo sauce diced, from 1 can of chipotles in adobo sauce
- 2 tablespoons lime juice freshly squeezed
Instructions
For the sliders
- Mix the 3 tablespoons of Mexican seasoning and 5 tablespoons of melted butter together.
- Split the Hawaiian rolls like a bun, but leave them connected at the bottom. Place the bottom half of the rolls on a sheet pan.
- Brush or pour 2 tablespoons of butter mixture on the insides of the bottom buns. (You'll use the remaining butter mixture for the top.) Bake at 375โ for 7 minutes.
- Sprinkle the Monterrey Jack cheese on the bottom rolls.
- Heat the skillet to medium-high, add the chicken, and through. Add the chipotle sauce and stir until the chicken is coated with the sauce. Spoon the chicken evenly over the cheese on the bottom half of the rolls.
- Top the chicken with the crumbled queso fresco. Place the top half of the slider buns on top and press gently.
- Brush the remaining butter and Mexican seasoning mixture over the top of the buns. Place in a preheated 375โ oven for 15 to 20 minutes or until heated through and the tops of the buns have browned slightly.
- Serve immediately.s
