WHAT IS PIMENTO CHEESE?
โIn the cuisine of the Southern United States, pimento cheese is a spread or relish made with cheese, mayonnaise, and pimentos. Elsewhere, different ingredients may be used. It is served on bread, crackers, and vegetables, or in sandwiches.โ
Additionally, you may hear pimento referred to as the โpate of the Southโ.
Two of my favorite foods are potatoes and pimento cheese. I have many different recipes for potatoes and I enjoy them all. As well, l have several recipes for pimento cheese. I simply smashed two recipes together to get this goodness!
Typically a spread for sandwiches, every Southerner has a good recipe for Pimento Cheese. We love those old-fashioned recipes!
Pimento Cheese Scalloped Potatoes
This is one of the best recipes that youโll find and itโll satisfy your craving for comfort food. Similar toย Twice Baked Potato Casserole, itโs full of flavor with the addition of pimento cheese spread. Creamy, cheesy, satisfaction.
I cooked Yukon gold potatoes and spread a simple mixture of pimento cheese with them. Furthermore, I used Yukon gold potatoes particularly since the skin is thin and they donโt need to be peeled. Thatโs one less step that I donโt need!
Additionally, I used Velveeta cheese. However, if you donโt like Velveeta you can use all cheddar cheese in your recipe.
