Pimento Cheddar Cheese Grits Recipe
- One of the most important tips is to salt the liquid you’re cooking the grits in. Grits won’t absorb any more salt once they’re cooked. I used 1/2 teaspoon salt for 1 cup of grits in this recipe. You may want to adjust that to your liking.
- Whisk the grits while they cooking to ensure the creamiest result. I mean whisk almost constantly.
- I used quick-cooking grits, not instant. You can also use stone-ground grits, but they take about 45 minutes to cook versus less than 10 for quick-cooking grits.
- You can also cook grits in a slow cooker. It will take 2.5 to 3 hours on high. Add the cheddar and pimentos the last 15 minutes.
Pimento Cheddar Cheese Grits Recipe
Ingredients
- 1 cup uncooked grits
- 2 cups heavy whipping cream not whipped
- 2 cups whole milk
- 1/4 cup butter
- 1/2 teaspoon salt adjust to your taste
- 2 ounces cream cheese
- 1 and ยผ cups cheddar cheese grated (or your favorite cheese)
- 1/4 teaspoon black pepper
- 4- ounce jar pimentos diced, drained
- โ teaspoon cayenne pepper optional
- Garnish Optional: sliced green onions
Instructions
- Bring cream, milk, butter, and salt to a boil.
- Whisk in grits and reduce heat to medium.
- Cook 7 to 8 minutes whisking constantly.
- Remove from heat and stir in cheese, cream cheese, pimentos, black pepper, and, if desired, cayenne pepper.
- Plate and serve hot.
