This recipe is great because it’s versatile and reheats beautifully for leftovers. A tip to make it easier: cook the ground beef in advance and store it in the fridge. That way, you can assemble the casserole quickly when ready to bake.

Keto Hamburger Casserole Tips & Substitutes

  • Use room-temperature cream cheese to ensure it mixes smoothly with the other ingredients in the keto hamburger casserole. Cold cream cheese can be lumpy and more challenging to incorporate.
  • Drain any excess grease from the cooked beef before adding the other ingredients. This helps keep the casserole from becoming greasy. You likely won’t have much grease if you use 90/10 or 85/15 lean beef.
  • You can substitute ground turkey or chicken for beef in this keto-friendly dish.
  • If you like extra spice, use a hot version of tomatoes and green chilies or add a pinch of cayenne pepper.
  • You can use any Mexican seasoning if you don’t have taco seasoning on hand. Try fajita seasoning, smoked paprika, cumin, or any other seasonings you like.
  • I like to use Greek yogurt because it has more protein for this keto hamburger casserole, but you can substitute sour cream.
  • Use any cheese you like or have on hand.
  • Check labels and brands for each ingredient, 1 or 2 extra carbs per serving for each of the ingredients will add to the total carbs in the finished recipe. Some types and brands of cheese have a good many carbs.
