JALAPENO PIMENTO BACON GRILLED CHEESE

Jalapeno Pimento Bacon Grilled Cheese is a gourmet grilled cheese sandwich that’s easy to prepare and delicious. Meet your new favorite sandwich! It is made with jalapeno pimento cheese and candied bacon and grilled to perfection!
This would be the perfect Summer lunch for you and your kids. It takes minutes to make and is super yummy. Serve it with a salad or fruit to make a more well-rounded meal. It also is perfect with Tomato Soup. If you’ve never tried this flavor combination, do yourself a favor and make it now!!

A grilled cheese is just a grilled cheese, right? I mean, all you do is throw some cheese on two slices of bread and slather on the
JALAPENO PIMENTO BACON GRILLED CHEESE
When making any grilled cheese sandwich, every ingredient is important.
- Bread. You need sturdy bread for grilled cheese. My first choice is sourdough bread. Next, I like Texas Toast which is what I used for this sandwich. (Because I got to the market too late to get fresh sourdough.)
- Bacon. I made Brown Sugar Bacon, but you can use plain bacon if you want. Also, chop it before adding it to the sandwich. I hate biting into a sandwich and the whole slice of bacon pulls out! Additionally, you can cook the bacon beforehand. It’ll reheat nicely while grilling.
- Pimento cheese with Jalapenos. You can purchase ready-made Jalapeno Pimento Cheese, but I used this recipe, Jalapeno Pimento Cheese, and made it from scratch.

JALAPENO PIMENTO BACON GRILLED CHEESE
Ingredients
Jalapeno Pimento Cheese
- 8 ounces Colby cheese shredded
- 8 ounces cheddar cheese shredded
- 4 ounces pimentos diced, drained
- 1 medium jalapeno pepper seeded and diced, or ¼ pickle jalapenos diced
- ¾ cup mayonnaise Blue Plate or Duke's
- ½ teaspoon ground mustard
- ⅛ teaspoon salt optional
Candied Bacon
- 1 pound bacon thick-cut sliced
- ⅓ cup brown sugar
Instructions
Candied Bacon
- Preheat oven to 400°F. Line a rimmed baking sheet with aluminum foil.
- Arrange the sliced bacon in an even layer on the wire rack that's sitting on a sheet pan or roasting pan. Next, sprinkle the top of the bacon evenly with the brown sugar. (If I were making this to just eat, I'd add paprika and red pepper. But I find the jalapenos offer enough heat when using them.)
- Bake for 15-20 minutes, until the bacon, is crisp.
Jalapeno Pimento Cheese
- Drain pimento, reserving liquid. In a large bowl, combine cheeses, pimento, jalapeno, mayonnaise, mustard, salt (pinch, optional), and 1 tablespoon pimento liquid.
- Mix together until completely combined. Taste and add more salt and mayonnaise if necessary.
For the sandwich
- Preheat skillet over medium heat.
- Generously butter one side of a slice of bread.
- Place bread butter-side-down onto skillet bottom
- Spread ¼ cup Jalapeno Pimento Cheese on bread, top cheese with about ⅓ cup bacon chopped.
- Butter a second slice of bread on one side and place butter side up on top of sandwich.
- Grill until lightly browned then and flip over; continue grilling until cheese is melted and bacon is hot.
- Repeat with remaining three sandwiches.
