- 3-4 medium (1.10 lb | 500 g) chicken breasts skinless, boneless
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- 1 medium (4.23 oz | 120 g) red bell pepper sliced
- 2 (6.34 oz | 180 g) carrots cut in strips
- 1 handful green beans
- 1 tablespoon olive oil
Honey Garlic Sauce
- 2 tablespoons garlic clove minced
- ยผ cup (2.02 fluid oz | 60 ml) honey
- 2 tablespoons low sodium soy sauce
- 1 teaspoon sesame seeds
- ยผ cup (2.02 fluid oz | 60 ml) chicken broth
Instructions
- Halve each chicken breast.
- Season each side with salt, pepper and chili powder.
- Fill each of them with bell pepper, carrots and green beans.
- Roll up and secure with toothpicks.
- Heat a non-stick skillet on medium high heat. Sear the rolled chicken on each side until nicely browned. It will take about 5-7 minutes. Turn heat to medium and pour honey garlic sauce in it.
- Honey Garlic Sauce: In a small bowl, combine all ingredients.
- Pour in the skillet on chicken and cook for 1-2 minutes. Spoon sauce over chicken.
- If the chicken breasts (or chicken rolls) are thick and/or you like the vegetables more tender, you may want to bake in the oven for 15 to 20 minutes at 375โ.
