GRILLED CORN ON THE COB IN FOIL WITH MAYO
Ingredients
- 6 medium ears of corn
- 2 medium limes zested and juiced
- ยฝ cup mayonnaise or cream cheese or sour cream
- 1 teaspoon salt more or less to your taste
- ยฝ teaspoon smoked paprika
- ยฝ teaspoon ground cumin
- ยฝ teaspoon chili powder
- 3 tablespoons butter
- ยฝ teaspoon Tajin seasoning
- 1 cup queso fresco grated
- ยผ cup fresh cilantro chopped, loosely packed
Instructions
- Start by covering the top half of your corn in lime juice, lime zest, and mayo.
- Combine the salt, paprika, chili powder, and cumin.
- Sprinkle seasoning mixture evenly over corn.
- Wrap each ear of corn up in foil. Grill at 350 to 400 degrees for 10 minutes.
- Remove from the grill and allow to cool slightly. Drizzle melted butter, Tajin seasoning, Queso Cotija, and cilantro over corn.
- Serve immediately
