So I’ve been present on the blog the last couple of weeks in body, but not so much mentally. I apologize for my mental absence! I figured you’d forgive me since I brought you these Favorite Caramel Apple Blondies with Browned
So what’s been going on, you ask
- Both boys have fundraising at school
- PTO is in full swing
- Junior Auxiliary has kicked back up and I had to work Clothes Closet and call on businesses for ad sales for Charity Ball, not to mention I’m chairing Awards Committee which I do not know what I’m supposed to do, be doing or have already done!
- Conferenced with Lincoln’s teachers because he’s more concerned with socializing than getting his work, then when he actually does finish he hasn’t been turning in…. for four weeks!!!
- I disciplined Lincoln for the aforementioned behavior by taking away all gaming privileges, which only harms my productivity since he isn’t entertaining himself, but insists on telling me 100 jokes per day. {My English teacher would love that run-on sentence!} Now, don’t get me wrong, I’m all for a good joke, not a joke on an 11-year-old level! But, I laugh. It makes him feel good!
- We dropped the swim team for the boys but started tennis and golf. Did that help me any?
- I got a new haircut and color. Hey! It’s a priority, nobody wants to see brown roots!
- Garden club met, but it’s actually a fun club. Basically, we meet, drink wine, and talk! Sometimes, we have home shopping parties. {Note to self: stay in this club}
- I’m helping host an engagement shower at my house! Wrapping up little projects that have been left incomplete
since I started blogging. - We tailgated. We won! Winning is fun. Tailgating is too!
- Online, I blogged a little and socialized a lot!

But, you do what you can to get by, you ask for help when you need it, you cry on your spouse’s shoulder if needed or you fuss then get over it and move on…
Now, for something completely unrelated, well, it’s kind of related. I made these Caramel Apple Blondies Recipe for football pregame. And, the two that weren’t eaten at the tailgate, I swirled in creamy vanilla double-churned ice cream and had the best milkshake ever! {Make note of that one!}

- butter, softened
- brown sugar packed
- large eggs
- pure vanilla extract
- all-purpose flour
- baking powder
- salt
- ground cinnamon
- apple (approximately one large apple)
- toffee bits

Favorite Caramel Apple Blondies with Browned Butter Frosting
Ingredients
- โ cup butter softened
- 2 cup brown sugar packed
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 cup all-purpose flour
- 2 tsp baking powder
- ยฝ tsp salt
- 1 tsp ground cinnamon
- 1 cup peeled diced apple (approximately 1 large apple)
- ยฝ cup English Toffee Baking Bits
Frosting
- ยฝ cup butter
- 1 cup brown sugar
- ยผ cup half and half
- 2 to 2 ยฝ cup powdered sugar (aka confectioners) sifted
Instructions
- Preheat oven to 350 degrees
- Spray bottom and sides of a 9×13 inch casserole dish or cake pan with non-stick spray. I, then, like to line it with heavy duty aluminum foil allowing foil to extend over edges.
- In a bowl, whisk flour, baking powder, salt and cinnamon.
- In the bowl of a stand mixer, cream butter and brown sugar at medium until light and fluffy, about 3 minutes. Scrape sides of bowl.
- Add the eggs, one at a time, beating until well combined.
- Add vanilla and beat until combined.
- Add the dry ingredients and beat at low speed until just combined, about 30 seconds. Scrape sides of bowl as needed.
- Fold in apple and toffee.
- Spread batter into prepared pan. Bake 15 to 20 minutes or until set in the center. Test by inserting a wooden pick in center. Cake is done when pick comes out clean.
- Place on a wire rack to cool.
- Prepare frosting while cake cools.
Frosting
- Melt butter in a small pan over low heat. Whisk constantly until it turns a light amber color. Be careful not to burn. Stir in brown sugar and half and half. Bring to a light boil then remove from heat. Keep whisking until sugar dissolves and the mixture is smooth. Whisk in powdered sugar and stir until smooth. Add more half and half one teaspoon at a time if necessary to keep the mixture smooth, creamy and spreadable.
- Pour over cake and spread evenly.
- Enjoy!
