Let’s face it, folks, rice is just one of those ingredients that you need in your pantry at all times. You can just do so much with it, dress it up, dress it down, heck, you can even makeย a dessertย with rice!

Although I love plain white rice, I also love this jazzed-up version. It’s ‘fancy’ enough to serve guests but oh-so-easy to make. You throw everything in a casserole dish and stick it in the oven!ย Truly, it’s that simple.

It’s “Extreme” because it’sย extremelyย good!!

This recipe serves 12.ย A mixture of rice, garlic powder, mushrooms, and a handful of other ingredients makes this recipe so delicious. From preparation to the plate, this recipe takes roughlyย 1 hour.

When buying canned soup, look for low-sodium versions to reduce unnecessaryย sodium.

Some bouillonย andย stock products contain gluten, and some don’t. If you are following a gluten-free diet, always read product labels carefully.

Here’s an easy, healthy swap, you may want to substitute brown rice for white rice.

  • Preheat oven to 375 degrees. 
  • Mix all the ingredients together and pour into a 2 quart casserole dish. Bake uncovered 45 minutes. 
  • Check casserole and bake an additional 5 to 10 minutes if it still isn’t set. The broth and soup should be almost all cooked out of the rice.
  • Optional: Spread 1 cup grated cheddar cheese on top for the last 10 minutes of cooking time.
  • Actually, the almonds are optional as well. But, if you opt out of all the goodies, well it just would not be Extreme Rice.

  3. Pimentos are a small mild sweet pepper, they're pickled and soft. You could use roasted red peppers or sun-dried tomatoes. It'll change the flavor a little but still be good. I've used sun-dried tomatoes before and it's delish! Thanks for stopping by! ~ Paula
