My Creamy Mexican Kale Slaw will win you over from your basic slaw recipe!
Creamy Mexican Kale Slaw
Creamy Mexican Kale Slaw is cool and crisp with a bold taco flavor. It’s good as a side dish or on sandwiches or tacos.
I started this recipe with a bag of kale slaw mix. You can traditional coleslaw mix if you like. Next, I added black beans, corn, jalapeno, cilantro, and green onions. You can add any vegetables you like to the mix. Celery, bell pepper, and red onion would make yummy additions.
For the dressing, I used mayonnaise, Greek yogurt, lime juice, and taco seasoning.
I used a premade taco seasoning, but you can make it from scratch. (recipe here)
As well, I used Greek yogurt. You can substitute sour cream.

Creamy Mexican Kale Slaw
Ingredients
- 12 -ounce bag kale slaw
- 15 -ounce can black beans rinsed and drained
- 11 -ounce can shoepeg corn drained
- 1/2 cup fresh cilantro fresh, chopped
- 1 medium jalapeno pepper de-seeded and minced
For the sauce
- 3/4 cup mayonnaise can use olive oil mayo
- 1/4 cup Greek yogurt
- 2 tablespoons taco seasoning
- 2 tablespoons lime juice fresh
Instructions
- In a small bowl combine all the sauce ingredients and whisk until smooth.
- In a large bowl, add slaw, black beans, corn, cilantro, and jalapeno. Add sauce and stir to combine.
- Serve immediately or refrigerate. Store in an airtight container in the refrigerator up to 3 days.
