Creamy Corn Bacon Dip

I may have just found the perfect snack!

This dip is creamy, slightly sweet from the corn. The jalapeno offers a back note of heat. The bacon, oh the bacon, smoky and sweetened with pure maple syrup is the perfect topping! After all, bacon does make everything better!

Creamy Corn Bacon Dip

Do you tailgate for football games? It’s a huge part of our fall. I basically plan our menu all week, cook on Friday, pack it all up, and head out to the game on Saturday. I’m testing a few recipes early this year. I keep a list of recipes that are a hit. Anything with bacon always gets rave reviews from the guys!

Ingredients

Instructions

  • Preheat oven to 400 degrees.
  • In a bowl, combine all ingredients except bacon and maple syrup.
  • Place in a 1 quart baking dish or individual serving dishes.
  • Mix cooked and crumbled bacon with maple syrup. Spread bacon evenly over dip mixture.
  • Heat 25 to 30 mintues for the 1 quart dish or 10 to 15 minutes for a smaller dish.
  • You’ll want the dip heated through and the cheese melted.
  • Serve with chips, crackers or vegetables
  • You can also serve this in a hollowed-out bread bowl. To serve, hollow out a sturdy bread like sourdough, Italian or French bread loaf. First, cut a slice off the top and hollow out the inside. (Reserve these bread pieces.) Fill the bread bowl with the dip mixture and top with bacon. Replace top slice of the bowl and wrap in aluminum foil. Bake 30 minutes. Serve with bread pieces. You may also want to make this in the slow cooker. If you choose this method, warm all ingredients except the bacon and maple syrup. Top the dip with bacon and maple syrup just before serving.

  4. I like the idea of a creamy dip with corn and bacon! I totally understand the tailgate and cooking thing. Weekend parking lot warrior here as well. We have season tickets to our college team. Friday night is cooking and packing stuff up to head out early on Saturday. We have a grill that attaches to the back of our SUV to re-heat/cook things. Our tailgates always involve a dip or two of some sort ๐Ÿ˜‰

        BTW, just read your profile. My brother and sister in law are Rebels. I have not been to an Ole Miss game, but went to their wedding in Oxford. The SEC sure does know how to tailgate ๐Ÿ™‚ I wish we had that same sort of thing up here in Virginia, but we do our part ๐Ÿ™‚

      2. Oxford is beautiful, I live about 45 minutes from there so we go to all the games. If you ever get a chance to go to a game there, it’s worth it. Every one should have the Grove on their bucket list. ๐Ÿ™‚ And let me know if you come! I thought you guys were big in football? Gosh, it is almost a religion here.
