Cream Cheese Brownie Cups
These Cream Cheese Brownie Cups are much like my Brownie Bites. I start with a brownie mix. Occasionally when I’m pressed for time, I use short-cut methods to cook and bake. There is nothing wrong with using a boxed mix.
As well, some people don’t like to cook or bake, but at times they’re asked to contribute to a school party or such. This is a quick and simple recipe for those times. If you have a blue-ribbon-award-winning brownie recipe, of course, you can use it instead of a mix.
This is the type of brownie mix I use for this recipe. Be sure to get the brownie mix that makes enough for a 9×13 inch pan. (A lot of the mixes are for an 8×8 pan.) Then you’ll need ingredients that it is called for on the package for the fudgy brownies. Most mixes will have a fudgy mix or a ‘cake-like’ mix, I used the recipe for the fudge mix.

Ingredients
- 18.3 oz box brownie mix
- ingredients called for on brownie mix The mix I used called for 2 eggs, 1/4 cup water, 3/4 cup vegetable oil
- 4 oz cream cheese
- 1 large eggs
- 1/2 cup granulated sugar
Instructions
- Preheat oven to 350ยฐF.
- Line muffin tin with liners or spray generously with non-stick spray.
- Mix brownie mix according to package directions.
- Spoon approximately 3 tablespoons of mix into muffin tins
- Mix the cream cheese, egg and sugar until smooth.
- Spoon 1-2 tablespoons of cream cheese mixture over brownie mixture. (*swirl with wooden pick if desired)
- Bake 15 to 18 minutes
- Watch carefully and donโt over cook.
