Step 1: Season the Shrimp

  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons oil

Chimichurri Sauce

  • 2 cups cilantro finely chopped (about 2 oz / 60 g)
  • ยฝ cup olive oil about 4 fl oz / 120 ml
  • 3 cloves garlic peeled and finely minced
  • 1 medium shallot peeled and finely minced
  • 2 teaspoons lime juice
  • Salt to taste
  • Pepper to taste

To Serve

  • 1 cup tomato diced (about 5.5 oz / 155 g)
  • 1 avocado sliced
  • 2 cups rice about 12 oz / 340 g, cooked
