Skinny Cake Batter No Churn Ice Cream, could it get any better?
I had a blast making this Skinny Cake Batter No Churn Ice Cream. It may, in fact, be the easiest dessert that I’ve ever made. Only four ingredients make up this delicious dessert. You could purchase the cake and be down to three ingredients; you may sacrifice the ‘skinny’ part if you do that though.

- Cake mix
- Diet soda
- Whipped topping
- Sweetened condensed milk

Skinny Cake Batter No Churn Ice Cream
So here’s a little secret: you can make a cake using a cake mix and diet soda! I know, scandalous, right? So, all you do is combine the cake mix and the diet soda in a bowl. I used Diet Sprite because I didn’t want a dark soda that would alter the color of my cake. I also used the Funfetti cake mix because I knew I’d be making this into ice cream, but you can do this with any cake flavor. Bake the cake according to the instructions on the cake and let it cool completely. I made a 9×13 cake.
Tips and subs
For the ice cream, you’ll only use half of this cake. You can make cake balls, truffles, truffle bark, or a trifle with the other half.
Using the diet soda made the cake part of this recipe low-calorie. For the other two ingredients, I used fat-free sweetened condensed milk and fat-free whipped topping.
This would be a great recipe to have the children help with. It would also be a great recipe if you made a cake that fell while baking or stuck to the pan.

Skinny Cake Batter No Churn Ice Cream
Ingredients
- 1 15.25 oz box cake mix any flavor. I used Funfetti but you could use any flavor to change it up.
- 1 can diet soda 12 oz diet soda, I used diet Sprite
- 16 oz container fat-free whipped topping I used Cool Whip (you could use lite or regular whipped topping)
- 1 can sweetened condensed milk
Instructions
- In a large bowl, combine cake mix and 12 oz diet soda. Stir to combine. Pour into cake pan. You can bake it in layers or a sheet pan. Use the instructions on the cake mix box as your guide for baking times. When done, remove and allow to cool.1 15.25 oz box cake mix, 1 can diet soda
- *You will only need half of the cake for this recipe*
- Whisk sweetened condensed milk and whipped cream until combined. Break HALF of the cake into large chunks and stir into the milk mixture. Allow some of the cake to stay in chunks.1 can sweetened condensed milk, 16 oz container fat-free whipped topping
- Pour mixture into a freezer save container that has a lid.
- I like to place plastic wrap directly on the ice cream then put the top on container.
- Freeze for at least 2 hours. Store in freezer up to 4 weeks.

I’m confused do I bake the cake as directed on the box? Or do I just add sprite and bake
Angie, bake the cake using the sprite only. It will work, odd as it seems. I usually whisk the sprite and cake mix by hand and dump it in a 9×13 pan and bake for 26 minutes (your oven may be a little different). It doesn’t matter what the cake looks like since it’s just going to be mixed in the other ingredients.
This looks freaking delicious…. but this is in no way “skinny”. Box Cake and Condensed milk have looooaaddddssssssss of calories and sugar!!!! Fat free doesn’t always mean “better choice”. Considering that there are 23g of sugar for only 1/12 of the cake box mix…
That being said, it does look really amazingly good. And i would probably try it, but I just wouldn't label it "skinny" ๐

Store in the REFRIGERATOR for up to 4 weeks, is that accurate? Does it not get kind of milky at a lower temp?
Thanks for the recipe tho, We love cake batter ice cream for about the first 3 bites and then it gets entirely too sweet and gives us a headache! My son usually gives into the temptation anyway and keeps eating it until he is curled up in the fetal position, wondering why his head and belly hurt SO BAD!! Haha. Welllllll that is what happens when you overindulge… =P
