I knew when I received the food item for this month’s Get Your Chef On Challenge with Julie from White Lights on Wednesday and Jen from Four Marrs One Venus that I’d love it. The problem is I love blackberries. I’ve never cooked or baked with blackberries. Why? Well, I eat them before I can make anything with them!!
I put my thinking cap on’ as my Mom used to say and came up with these gloriously delicious Blackberry Cake Donuts with Lemon Glaze.ย
There’s a restaurant in town that makes the best blueberry donuts. I’ve tried and tried to recreate them, but I just haven’t gotten it right yet. Oh, but I will, it’s become a challenge now. Those creamy, steamy donuts were my inspiration for these Blackberry Cake Donuts.
Before we get to the recipe, look at my picture. I’m working on my photography skills and I learned two things on doing these photographs.
- Don’t use a brown background of brown food. {Duh. That should have been a given, but unfortunately for me, it wasn’t.} I took about 30 photos, downloaded them and when I looked at them I realized they were blah. I changed backgrounds and am happier with these.
- Another ‘duh’, I wear contacts because I’m nearsighted. Well, I can see to focus close-up pictures a lot better when I’m not wearing my contacts. So now, I’m contacts in , contacts out, glasses on, *sigh* oh, well, whatever works!
On to the recipe!
First step, make the blackberry sauce and let it cool! I used this recipe and replaced the blueberries with equal amounts of blackberries. (click photo below for sauce recipe)
Blackberry Cake Donuts with Lemon Glaze
Ingredients
- โ cup Blackberry filling see link in post for recipe
- 2 and ยผ cup all purpose flour
- โ cup granulated sugar
- 1 Tablespoon baking powder
- ยฝ teaspoon ground cinnamon
- โ teaspoon freshly grated nutmeg
- ยฝ teaspoon salt
- 4 Tablespoon unsalted butter melted
- ยฝ cup Greek yogurt
- 2 Tablespoons whole milk
- 1 large eggs lightly beaten
- 2 teaspoons pure vanilla extract
- 1 cup powdered sugar (aka confectioners)
- 4 Tablespoons fresh lemon juice
Instructions
- In a large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg and salt, stirring to combine. In another bowl, combine yogurt, egg, milk and vanilla extract, mixing together.
- Add melted butter to the dry ingredients, stir together until crumbs form. Stir in milk and egg mixture, when it's almost combined add the blackberry filling. Combine blackberry filling into a swirl pattern then bring the dough together with a spoon.
- Using your hands form it into a large ball, then roll it out on a floured surface to about 1/2 inch thick. Cut donuts using a donut cutter. (I fried the holes as well and only re-worked the dough for the extra little scraps that were left.)
- Heat oil in a large pot or deep fryer, bringing it to 375 degrees. Fry donuts 1-2 at a time, frying for about 1 1/2-2 minutes per side. Check donut in center for doneness and adjust heat/cook time for remaining. Drain on a paper towel, drizzle Lemon Glaze over all.
- Lemon Glaze: Whisk confectioners sugar and lemon juice together until smooth.

I’m the same way with baking with candy as you are with blackberries…I have to purchase double the amount. Bcz I eat all of what I’m supposed to be baking with! Good luck with the ribs today…those are hard and a pain to photograph! (That’s why I put them in sandwiches when I did them a few wks ago!)

I’d have a hard time with blackberries, too, I think. I rarely buy them except to dress up a fruit salad or something. Your donuts look so yummy! I hear you on the photos – I took a whole set of my toffee raspberry beer brownies last week and they looked totally blah so I had to reshoot the whole thing (which meant whipping up another batch!)
