If you need to assemble a last-minute appetizer or party snack, look no further than these Blackberry Bites. They are a fresh, light appetizer that is simple and easy to make.

Fruit skewers made with fresh fruit and cheese will become a regular snack for every potluck, barbecue, and game-day party.

Some of the tastiest appetizers are also the simplest. Take a Charcuterie platter for instance, what could be more simple than piling cheese, meat, and crackers on a board? These are the perfect finger food that adds a fancy feel to the table.

Blackberry skewers are a good mix of fruit, flavor, and fun. You can make skewers with any fruit, depending on what’s in season. Strawberries make a lovely kabob.

What makes Blackberry Bites bites so lovely, other than the ease of making them, is the flavor combination. The tart, sweet berries mixed with earthy basil and creamy mozzarella are a flavor explosion for your mouth.

You can use another cheese, but I do love fresh mozzarella.

You can also add a creamy, sweet dip if you want

Fruit skewers look and taste best right after you prepare them, but they will last up to 24 hours in the fridge, tightly wrapped on a paper towel-lined baking sheet.

This concept works for any bite-sized piece of fruit. Fresh fruit is best, but you can use frozen fruit. Stick with heartier fruits that retain their texture, like pineapple, mango and strawberries. Here are some other combinations to try.

  • grapes and fontina
  • green apples and gouda
  • pears and sharp cheddar
  • blueberries and brie
  • peaches and goat cheese

All you need to do is take a bite-size piece of the fruit and stack it on a toothpick or bamboo skewers with cheese.
