Black and Blueberry Ricotta Toast has lightly sweetened creamy ricotta on toasted bread topped with sweet juicy blueberries and blackberries. This ricotta recipe is ready in just minutes and great for breakfast, lunch, dinner, or snack.

Ricotta toast is a healthy and satisfying way to refuel. The flavors and textures compliment each other. It has the crust and crunchy bread, creamy and slightly sweet ricotta, and tart bright berries. For the ricotta, you can smear it on the bread as is or whip it to make it creamier.

How to Whip Ricotta?

Whipping ricotta makes it fluffy, light, and super creamy. Whole milk ricotta will be creamier and richer than skim ricotta when you’re whipping ricotta. It’s a simple process, simply add ricotta in theย bowlย of aย food processorย and pulse until smooth. Season with salt and pepper, to taste.

Toast bread

  • Use a toaster if youโ€™re making just one or two toasts. Use the oven if you’re making more.
  • Use the oven, lay the slices on a large baking sheet in a 350ยฐF oven for about 10 minutes, flipping halfway through.
  • Use the broiler. Turn on the broiler and toast the bread for just a few minutes on each side. Watch it closely so it doesnโ€™t burn.
  • Use the air fryer. Turn on the Air Fryer and toast on one side for a couple of minutes until it’s as toasted as you want, flip the bread, and repeat.

  • Bread. The best bread is sturdy bread such as multi-grain, whole grain, or sourdough bread. However, you can use any bread you have on hand. I used Dave’s Killer Bread Powerseed.
  • Ricotta. You can use your favorite ricotta whether it’s whole, reduced fat, or low fat ricotta.
  • Blackberries and blueberries. Wash and dry your fruit before adding to the toast.
  • Date syrup. I drizzled on maybe 1 teaspoon of date syrup to bump up the flavor.
  • Sprouts. I used Wild about sprouts. You can use any sprouts, microgreen, nuts, or seeds.
