Dynamite Shrimp Cooking Tips

  1. Preparing the Shrimp: Make sure the shrimp are peeled and deveined. You can leave the tails on for a nice presentation or remove them.
  2. Buttermilk Soak: Soaking the shrimp in buttermilk helps tenderize them and adds a slight tang. It also helps the cornstarch adhere better to the shrimp.
  3. Seasoning: Adding garlic powder, salt, and pepper to the buttermilk ensures the shrimp are well-seasoned.
  4. Coating: Dredge the shrimp in cornstarch for a light, crispy coating. Make sure each shrimp is evenly coated before frying.
  5. Frying: Use enough oil to submerge the shrimp. Fry in batches to avoid overcrowding the pan, which can lower the oil temperature and result in soggy shrimp. Fry until golden brown, about 2-3 minutes per side.
  6. Bang Bang Sauce: Mix the mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust the amount of sriracha to your heat preference.
