Banana cobbler is sweet, full of bananas, has a caramel sauce and a buttery topping. Itโs a simple dessert that brings comfort while being easy to make. This recipe is great for using up ripe bananas and pairs well with ice cream or whipped cream.
You can mash some of the bananas and slice some. This helps keep the texture interesting. If you want a little extra flavor, add a pinch of nutmeg and/or allspice.

- butter I use salted
butter , you can use either salted or unsalted - self-rising flour* See note below
- granulated sugar
- whole milk You can sub non-dairy but it won’t be as rich and decadent
- pure vanilla extract or almond, or any flavor you like with bananas
- brown sugar packed
- bananas sliced, about 2-2.5 cups
- walnuts or pecans
- hot water

Self-saucing Banana Cobbler Tips & Substitutions
Yes, this cobbler has a lot of sugar. It’s needed to create the sauce. I have not tested with less sugar and I have not tested it with sugar substitutes.
For the best texture, use ripe bananas that are soft but not too mushy. You can also slice the bananas as I did. Or you can mash them and mix them into the batter.
You can substitute pecans for the walnuts. Or, you can use old-fashioned rolled oats instead of nuts.
Finally, you can add a handful of chocolate chips or shredded coconut for variety.

Self-rising Flour Substitution*
A substitute for self-rising flour is: 2 cups
I haven’t tested this with gluten-free flour.

Can this be made ahead of time? Yes, but itโs best served fresh. If you need to make it early, warm it up before serving.
How do I store leftovers? Keep them in an airtight container in the fridge for up to three days. Reheat in the oven or microwave.
Can I use frozen bananas? Yes, but thaw them first and drain any extra liquid to keep the cobbler from getting too wet. If you use frozen bananas, I recommend mashing them and mixing them into the batter.

Banana Cobbler
Ingredients
- ยฝ cup butter I use salted butter
- 1 and ยฝ cups self-rising flour
- 1 cups granulated sugar
- ยพ to 1 cup whole milk
- 1 teaspoon pure vanilla extract or almond
- 1 and ยฝ cups brown sugar packed
- 2 large bananas sliced, about 2-2.5 cups, see note
- 1 cup walnuts chopped
- 1 and ยฝ cups hot water
Instructions
- Preheat oven to 350 degrees.
- Melt 1/2 cup butter and pour into your 9×13 inch cake pan or casserole dish.ยฝ cup butter
- In a mixing bowl, combine flour, sugar, milk, and vanilla extract (or almond). Stir to combine, then pour over melted butter. The mixture will be slightly thicker than pancake batter.1 and ยฝ cups self-rising flour, 1 cups granulated sugar, ยพ to 1 cup whole milk, 1 teaspoon pure vanilla extract
- Sprinkle brown sugar over top of batter.1 and ยฝ cups brown sugar
- Spread the sliced bananas (see note) and chopped walnuts over the brown sugar.2 large bananas, 1 cup walnuts
- Carefully pour hot water over batter. Do not stir.1 and ยฝ cups hot water
- Cook 33 to 42 minutes until golden brown on top. The cobbler will be 'jiggly' in the center but will set as it cools.
- Serve warm with ice cream or whipped cream.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days. It can be reheated in the microwave or oven.
