Apricot Almond Energy Bars

After discovering how easy these were, I got hooked on making my own Apricot Almond Energy Bars Recipe. Usually, I’ll grab a bar to snack on while waiting in the carpool. I just hated paying the high price for the premade ones.

These couldn’t be more simple to make, literally toss everything in a food processor. You’ll then pulse until the mixture is the consistency you like. Do you like coarse chunks or a more fine texture? You’re in charge and you’ll quickly find out how fun and easy it is to make this Apricot Almond Energy Bars Recipe.

These energy bars are highly adaptable. You can substitute any dried fruit for the apricots or switch the almonds for another nut. It’s a great way to use up odd amounts of dried fruits and nuts, and as long as the bars stick together, you’re good.

Apricot Almond Energy Bars Recipe – 5 minutes to this simple energy bar recipe, cheaper and easier than store-bought.

Ingredients

Instructions

  • Line a 8×8 inch pan with aluminum foil or waxed paper, spray with non-stick spray if using foil.
  • Add all ingredients to a food processor. Pulse until mixture is the consistency you prefer. I go for medium texture, as seen.
  • Dump mixture into pan and press flat using your fingertips. Press firmly so mixture sticks together.
  • You can eat it right away or allow to set and it will stick and hold together better.

    I absolutely love both dried apricots and almonds so this is my kind of snack. Would they hold their shape as balls too?

    Im a stay at home daddy, always on the hunt for recipes to feed (experiment) on the family! My wife is the breadwinner and I feel extremely guilty when I just screw off and she comes home & still has to cook, and she’s an incredible cook at that! So im making this blue berry #cake for dessert.

  5. LOVE these, Paula! I made some cashew date snack bars a few weeks ago (still need to post) and they were so good. I’ve found I really love the sweetness dates add to a recipe. Gonna have to try these bars sometime!
