5 Minute Cosmic Brownie Protein Bites are an energizing, protein-packed, raw, superfood snack with so much energy in one bite!

These chocolate brownie energy bites are made in one bowl with no mixer or food processor required! They are the ultimate healthy, tasty snack and great for after-workouts, after-school, and lunch box treats. Another yummy source of protein is this high protein granola recipe.

5 MINUTE COSMIC BROWNIE PROTEIN BITES

I’m really trying to eat more protein which is hard for me because I’m a carb girl. Literally, live off pasta and potatoes. Protein is so important if you work out and especially as we age.

You probably already have everything you need to make these energy bites except chocolate protein powder. Any chocolate protein powder will work. If you don’t already have a favorite chocolate protein powder, I recommend Nuzest Clean Lean Protein. Nuzest is vegan and plant-protein with added probiotics. (It was developed for gut health.) It also has the lowest calorie of any protein powder I’ve found. (This isn’t a sponsored post, I just love it.)

INGREDIENTS FOR THE HEALTHIEST BROWNIE BITES

  1. Chocolate protein powder. Use a good-tasting chocolate protein powder because this is the main flavor you’ll taste.
  2. Cacao powder. I used Organic Cacao Powder. Raw Cacao Powder and Cocoa Powder are not the same things. Raw cacao powder is prepared by cold-pressing unroasted cacao beans. However, cocoa powder is made by roasting cacao powder at high temperatures which destroys vital minerals of cacao.
  3. Organic raw almond butter. I pour off the oil from the top and then stir it until it’s creamy. As well, you can use any nut butter. Sun butter would be good. I haven’t tested this recipe using powdered peanut butter, but that may work if you add more pumpkin.
  4. Almonds. As well, you can use cashews, walnuts, or sunflower seeds. However, these will change the flavor. You’ll grind the nuts small. (see photo)
  5. Pumpkin puree. Not pumpkin pie filling. 
  6. *Hershey special dark cocoa powder. Optional if they aren’t as chocolate tasting as you want. Start by adding 1/2 tablespoon at a time.
  7. *Coconut sugar. If your chocolate protein powder isn’t very sweet, you can add coconut sugar to sweeten them. Add to your taste preference.
  8. Cosmic sprinkles. You can also roll them in more cocoa or cacao powder, coconut flakes, crushed almonds or other nut, hemp seeds, flax seeds, or chia seeds.

TIPS AND RECS

Different brands of pumpkin may be more ‘watery’ than others. Drain as much liquid as you can before mixing it into the other ingredients.

You don’t need a mixer to mix this. Simply stir it together by hand.

I recommend refrigerating it for about 30 minutes before rolling it into balls. It’s less sticky cold.

Furthermore, you can press the batter into a 9×9-inch square pan and spread the sprinkles over the top. I recommend lining the pan with foil or parchment paper first. It’ll make them much easier to get out and cut.

I recommend storing your 5 Minute Cosmic Brownie Protein Bites in an air-tight container in the refrigerator. They’ll be good about a week. More than likely, they won’t last that long.

Ingredients

  • 5-6 tablespoons chocolate protein powder
  • 2 tablespoons cacao powder can omit and use more protein powder
  • ½ tablespoon Hershey's special dark cocoa powder if needed
  • 1 cup almond butter
  • 8 ounces pumpkin puree ½ can
  • ½ cup almonds chopped , measured before they're chopped
  • ½ cup cosmic sprinkles

Instructions

  • Drain excess liquid off pumpkin if necessary.
  • In the bowl of an electric mixer, combine protein powder, cacao powder, almond butter, pumpkin, and chopped almonds. (also add help, chia, and flax seeds if desired)
  • Mix to combine. Refrigerate for 30 minutes will make them less sticky to roll.
  • Roll into 1-inch balls, then roll in sprinkles (or alternate coating). I've found it easier to use an ice-cream scoop to batter so that each ball is the same size.

    These brownie protein bites were amazing. I love the added sprinkles. Takes me back to the brownies I used to carry in my lunchbox to school except these are healthier and taste so much better.
